Ah… lockdown 2020
During the first few weeks of lockdown there were few things that comforted the spirits like a fresh loaf of my dad’s special gluten free, nut flour bread with butter and honey. He had given me the dry flour mix in a large tupperware prior to the start of the lockdown and I was making fresh loaves as I needed them.
It was time to pivot. Time for reinvention. And I realised one morning that I could offer my dad’s delicious nut flour bread to others who follow a gluten free, low carb diet as I do. And so it was that ‘Le Pain de Papa’ (‘dad’s bread’ in French), came to be. My mum is French and no family recipe would be complete without her influence.
I have been following a gluten free diet for more than 20 years and have tried many products in this category. My dad is a very large man who played rugby at professional level and he follows a gluten free, low carb diet to maintain a healthy weight. My dad came up with this recipe so that we could have a genuinely tasty option that meets our dietary needs. With French family members, a bread without gluten was a rather foreign idea, but this one has made the grade! I hope you like it as much as we do.
